Preparation of lemons: Wash lemons thoroughly under running water to remove any impurities or pesticide residues.
Peel the lemons: Using a peeler or knife, peel the lemons trying to remove only the yellow part of the peel, without going too deep.

Drying: Place the lemon peels on a sheet of parchment paper and let them air dry for at least 2-3 days, or you can put them in an oven at a low temperature (about 40°C) for about 2 hours.
Grind the powder: Once the peels are completely dry, chop them in a blender or spice grinder until you have a fine powder. If you prefer a sweeter flavor, you can add a little sugar during the grinding process.

Storage: Store the lemon powder in an airtight jar, in a cool, dry place. The powder can be stored for several weeks.
Tips for serving and storing:
Lemon powder is ideal for flavoring cakes, cookies, and even savory dishes such as fish, salads and soups. Add it to a cup of tea or use it to flavor your yogurt. Store it in a tightly sealed container away from direct light to keep its fresh aromas intact.
