How to prepare – 6 ways to preserve tomatoes:
1. Cool – only at the right moment
Don't put tomatoes in the fridge right away! Let them ripen at room temperature.
Once ripe, store them in the refrigerator (preferably in the crisper drawer) to slow down the spoilage process.
2. Marinate in olive oil
Cut the tomatoes in half or into slices.
Place them in a jar, mix with garlic, herbs and a pinch of salt.
Drizzle with olive oil.
Store in the refrigerator – they can be stored for up to 3 weeks.
3. Oven drying (homemade "dried tomatoes")
Cut the tomatoes in half and remove the seeds.
Place on a baking tray with the cut side up, sprinkle with salt and dry in an oven preheated to 90-100°C for 5 to 7 hours.
Once cooled, place in a jar and pour in oil.
4. Freeze whole or as puree
Wash the tomatoes and remove the stalks.
They can be frozen whole (after blanching and peeling) or as a mixture and frozen in containers.
Perfect for sauces and soups in winter.
